Boost Your Budget Pantry Challenge

Well, week one is done and week two has just begun. I’m happy to say my first week started off very well! I took some time this weekend to completely organize my pantry. I went through all the food that was in there and put meals together. I was surprised at how little I need to purchase to make complete meals. I created a menu for the next two weeks off what was in my pantry! This is why I love stockpiling!! Also, this is why it’s a good idea to do a pantry challenge like this. I’m able to use some of my stockpile to make room for more (fresher) products. Plus, I’m able to keep my grocery budget minimal this month.

Here is my menu plan that I created for the next two weeks:

baked chicken with risotto
ham with mac and cheese
chili
spaghetti with garlic biscuits
tacos with cornbread and Mexican rice
baked chicken with pasta side and salad
vegetable soup
chicken with potato casserole
pork roast with rice and black eye peas

leftovers re-purposed:
chili over baked potatoes
spaghetti sandwiches
taco salad
vegetable soup over rice

All of the above can be made with the addition of just a few items. I plan to visit the grocery store later today and will write another post listing all I buy.

I also have signed up for the E-MEALZ Easy Meals for Busy and Frugal Families program which I strongly encourage you to look into.  It’s a great program that creates a menu based on your grocery store selection’s sales for the week.  You can print out your menu with recipes for the week and print your corresponding shopping list for the week.  This not only saves you time but money as well.  While I am pulling a few recipe’s from my list(s) I will begin to fully utilize this program next month.

Boost Your Budget Pantry Challenge ~ Week 1

I am so excited to be participating in the Boost Your Budget Pantry Challenge!! One of my goals for 2012 is to eat at home more often, so this challenge is a great way to start! I’m co-hosting this challenge with a few other ladies, so be sure to visit their blogs to read how they’ll be participating in the challenge!

This is not a “no spend” month, this is a “make do with what you have on hand and spend as little as possible” month.

Everybody’s personal goals will be different and we can each set our own rules – the point is merely to challenge ourselves and start off the new year with a boost to our budgets! I have recently joined E-MEALZ Easy Meals for Busy and Frugal Families.  This is a great time-saving and money-saving plan that I encourage you to check out.  E-Mealz creates a shopping and recipe list for your favorite store.  You print your list each week and take it to the store with you when you do your shopping.  They base the list on the current sales for the week.

Besides purchasing needed items for my E-Mealz list I plan to only purchase staple items such as fresh fruit and veggies, milk, bread, and eggs.  My goal is to spend under $200 for the month.

I plan to do this by using as many items as possible that I already have in my pantry, plus I can save at the store by purchasing items on sale and with coupons.

Menu Plan – Theme Nights

My kids are in their last week of school, so summer for us starts in just one week. I tell you, I won’t miss packing lunches every day, setting out clothes every night, or the early morning rush. I’m looking forward to the lazy day’s of summer!

We cook out quite a bit during the summer. With the day’s longer and the bed times later it just seems easier. It keeps us from heating up the kitchen with the oven and clean up is easier too.

To add some more fun to our summer dinners, I like to create theme nights. I find it takes some of the guess work out of what I’ll be cooking and since we tend to be pretty active over the summer, this is something I really love. I’m okay if we don’t stick with it perfectly, it’s just a nice guideline for us to go by. Here’s our theme night menu plan for the summer:

Monday: mystery night
Tuesday: Mexican or Italian night
Wednesday: leftovers
Thursday: dinner out
Friday: chicken on the grill
Saturday: steak or burgers on the grill
Sunday: crock pot dinner

I put Monday as mystery night because usually one night a week I’ll make a simple dinner like sandwiches, salad and baked potato or grilled cheese. Thursday is listed as dinner out because we usually eat out once a week. The other nights tend to stay what they are but all are interchangeable.

We’ve had company all weekend… my brother, sister-in-law, niece, and nephew are all here. They will be here till Tues so my menu includes some crock pot meals, as that’s the easiest to prepare and can feed a lot of people. Here’s my plan for this week:

breakfast:
cereal
smoothies
eggs, sausage
pancakes
waffles

dinner:
chili (crock pot), corn bread
crock pot chicken, vegetable, noodles
pasta, garlic bread, salad
baked potato, salad
leftovers
dinner out

For the past two to three years I’ve been reading a blog by Crystal over at MoneySavingMom.com, I’m consistently inspired by her posts. Recently she posted about eating from the pantry and inspired me to give it a try this week. We are getting back into our normal routine as my kids were home on Spring Break last week. Because they were home I never made it to the grocery store to pick up this weeks groceries. After reading her post I decided to check out my pantry and freezer to see what I could come up with for this weeks menu; I was quite surprised by what I had! Here’s my menu:

dinners:

chili,cornbread
baked potatoes topped with chili, salad
grilled chicken salad, grilled cheese sandwiches
crock pot chicken (recipe to come), rice, black eye peas
cheeseburger mac (recipe to come)

Planning quick, easy, yet nutritional meals for our family this week. We have two softball practices and one game this week so we’re pretty busy in the evenings.

taco’s, mexican rice, cornbread
baked chicken, steamed broccoli, corn
beef tips over egg noodles, green beans, carrots

cheese sandwich, pudding, chips, apple slices
ravioli, crackers, fruit cup, granola bar, cookie

dinner:
roast, mashed potatoes, veggie
baked chicken, rice, stewed squash
pasta, garlic bread, salad
dinner out
pork chops, rice, black eye peas

Menu Plan

It’s Monday.  This is normally when I do my major grocery shopping for the week.  My kids are in in school so I won’t buy any extras that we don’t need but they think we “just have to have”.  On Monday morning, after I drop the kids at school, I come home and create my menu for the week.  This allows me to make my list of items I need to purchase.  I never go to the store without my list.  If I do mistakenly leave it at home I find myself wondering around the store trying to remember what I needed.  This always wastes time and I always forget something.

So, here is my menu for this week:

breakfasts:

  1. oatmeal
  2. cereal x 2
  3. cinnamon rolls
  4. yogurt smoothies
  5. pancakes
  6. eggs and fruit

lunches:

  1. sandwich, fruit, yogurt, cookie, drink
  2. lunchable, fruit, pudding, cookie, drink

  4. chicken nuggets, fruit, cottage cheese, cookie, drink
